The sensation of bubble tea, or boba tea is sweeping across Melbourne, if not the world, with all sorts of unique bubble tea-based food popping up, and Moonshine Cake on Little Collins Street, is an incredible Asian-inspired bakery that delights in making bubble tea cake their famous specialty. Originally an online business established through WeChat, Moonshine Cake now has their own physical store in the heart of the Melbourne CBD – with a variety of specialty cakes (like lava bubble tea cake!) that caters for all occasions, from birthdays or those wishing for a sweet, unique dessert to end their day.
The good fat: Moonshine Cake’s acclaimed bubble tea cake features boba pearls on the side, with an earl grey base cake flavouring, and not to mention that saliva-inducing flow of lava earl grey from the centre when the knife hits the springy sponge. With simple instructions to follow, Moonshine Cake provides the bubble tea pearls in a cup that need to be heated up, then poured on top of the cake itself. Next comes that moment you’ve been waiting for to capture on your Instagram story – a gentle slice through the sponge rewards you with an overflow of molten cream-like icing, flowing out of the cake like all your childhood dreams coming true all at once!
The best thing about Moonshine Cake’s bubble tea cake is the light decadence of the earl grey within the sponge and the cream, not to mention the chewy texture of the boba pearls that complements everything. To make things even better, Moonshine Cake are just getting even more creative with their desserts in Melbourne- combining everything from the childhood favourite, White Rabbit lollies, to pork floss, just to name a few! You can bet you’ll find me at Moonshine trying their bubble tea cake again (and not just for that Instagram moment :P)
