
Pork Belly, cumin, orange, sweet potatoes
VAMOS, MELBOURNE CBD: For a Melbourne city bar, Vamos has the name and the vibe. Meaning “Come On!” in Spanish, Vamos is a Spanish tapas-styled bar with a great range of house drinks, as well as live music on most nights for the perfect atmosphere! Whether it’s a date night, a group catch up, or a classy work function, this venue encapsulates it all. Their menu had a few ups and downs for us, but the $39 6-choice tapas option is a great idea to sample a variety of everything whilst providing the freedom for one to choose.

Tostada w. Homemade chorizo, lettuce, aioli, manchego cheese
The good fat: Interestingly enough, the tostada and scallops, our first 2 tapas to start, were both our favourites of the night. The chorizo tostadas were amongst some of the best tapas I’ve had – the chorizo was seasoned with an explosion of flavour, whilst the manchego cheese gave that subtle earthiness and moisture, all on top of a light and crispy tostada cracker. I could eat this endlessly!

Scallops (3), black bean crackers, avocado, pork crackling
The scallops were cooked delicately, on a bed of creamy avocado and the unique addition of a black bean cracker – which captures both the Spanish/Mexican essence and adds a crunchy texture to the tenderness of the scallop.

Patatas bravas, potatoes, chipotle chilli, Bravas sauce
The pork belly was also cooked to perfection, the pieces tore off lightly when cutting through, with the satisfaction of crunching through the crispy skin at the end. The lightness of the sauce allowed the inherent flavours of the pork to dominate.

Crispy Barramundi Fillet w. Cucumber salad
The bad fat: The cucumber salad on the side of the barramundi was one of the strangest flavours I’ve ever tried… we couldn’t even pinpoint the sauce but it just really didn’t work for us and we had to leave the salad uneaten, leaving the fish rather one-dimensional in flavour. Similarly, the charred broccoli was quite standard – presented in a very chic manner, but merely tasted like a boiled broccoli, barely different to the ones I cook at home.
