SYNDICATE ROOM, SANDRINGHAM: Such a trek out from the city to reach this newly opened brunch cafe in Sandringham down near the coastal regions of Melbourne. On the busy Bay Road, Syndicate Room is quite a small area, but its white walls, high ceilings and floor to ceiling windows facing the natural light give it a great spacious touch. At first glance, their menu is peppered with a wonderful array of healthy options incorporated into standard brunch dishes. Not only this, they have a great selection of unique and interesting flavoured drinks – altogether presented in the most stunning and creative ways possible! But it’s not just about the aesthetic, as Syndicate Room does not fail to deliver on taste at all.

Beetroot Latte – $7.0 


First time trying a purple hot drink 🙂

The good fat: There is something magical about this drink that just tastes better after each sip – you can never get sick of it! At first sip, it’s a little reminiscent of the spiciness you experience from chai lattes, but then the after taste is quite different. It pulls back to a slightly sweet, and subtle lingering taste that’s just delicious, and not to mention healthy! If you’re a fan of chai lattes, then definitely try this!

The bad fat: Nothing!

Nutella Hot Chocolate w. Marshmallows, Chocolate and Macaron – $6.0


Imagine the amazed look on our faces when the waiter brought this over!

The good fat: Who’s ever seen such a decorated hot chocolate? Complete with Ferrero Rocher, marshmallows and macarons, this hot chocolate was just visually stunning the moment we laid eyes on it. I think I was so distracted by how great it looked the taste was just rich and perfect for me – a portion size enough not to be too sweet.

The bad fat: The chocolate inside the drink started to harden up so it was a bit difficult to drink.

Syndicate Breakfast Board (Zucchini and Corn Fritters, Ham and Cheese Tortilla, Avocado, Beetroot Puree, OJ and Mini Acai Bowl) – $18.0 (+ $5.0 for mushrooms)

The good fat: The best thing about the board would definitely have to be the fritters! Wow I just loved them – crisp and oily on the outside, wedged in between chunks of smooth avocado… they were perfect in texture and taste especially when you dipped a bit of it into the beetroot puree. I love the way they’ve managed to use beetroot so well in their dishes – the puree was flavoursome and slightly grainy, going perfectly with the fritters! The OJ was fresh and sweet. Another highlight would be the added mushrooms – not only were there a combination of different ones, they were cooked to such a perfect texture that they just melted in the mouth.

The bad fat: I was a bit disappointed with half of the board – the ham and cheese tortilla was incredibly standard. The tortilla was dry and hard to bite through, and the filling was bare and ordinary. I was very surprised by the green colour of the acai bowl as I had assumed it would be purple from the colour of the berries. In reality, it tasted simply like a green smoothie with a few chunks of deliciously crunchy granola but I couldn’t really distinguish it from the smoothies we had. The board would be much more stunning if they replaced the tortillas with larger fritters (as it was quite small) and a mushroom main instead.

Taro Pancake (Housemade Cherry Ice Cream, Raspberry Coulis, Mango Compote, Matcha Soil, Crushed nuts, Oreos, Candied lime, Fresh berries) – $20.0


I’ve never seen something so stunningly presented before!

The good fat: Having been to quite a few brunch places in Melbourne now, I’ve experienced my fair share of plating aesthetics but nothing is comparable when you have something like Syndicate Room’s taro pancakes. A stunning stack of warm, moist and chewy pancakes rested gently on a bed of cookie crumble encircled by fresh, sweet and juicy mangoes, berries, this dish is an absolute must order! Not to mention, the purple ice cream on top gave a deliciously refreshing, slightly icier texture compared to normal ice cream, adding the perfect combination of moisture to the pancakes. A touch of sweetness also came from the raspberry coulis. The fresh fruits were also a delicious complement! The taro was very subtle, providing a subtle earthy aftertaste.

The bad fat: Wish the matcha was more visible in the crumble soil because that would make it the perfect Asian fusion brunch!
